Ipomoea aquatica is originally from Southeast Asia and prefers moist locations on streams, ponds, rivers, rice fields, etc.

The water spinach is easy in culture with rich harvest. In China, it is a classic summer vegetables. After the first harvest, the plant continues to grow and branch, whereby every two to three weeks the young shoots can be harvested.
The water spinach grows well even on very moist soil, so that a pond is not absolutely necessary.
Both the leaves and the stems of water spinach can be used in the kitchen, usually fried or stewed. They are a good soup ingredient. Raw or blanched, they are also suitable for salads. Chopped and cooked, they can be used as a filling for steamed rolls or fried as part of spring rolls.
The leaves of water spinach are said to be very nutritious and contain many vitamins and minerals. They are said to be an excellent source of fiber, protein, calcium, iron, vitamin A and vitamin C.
Ipomoea aquatica is said to help with diabetes, liver problems, indigestion and constipation, reduce cholesterol, protect against heart disease, boost the immune system and promote eye health.
